Molecular Gastronomy - The science of taste and flavour

Join us as Professor Peter Barham, of the H H Wills Physics Laboratory at the University of Bristol, explores the topic of taste and flavour;

What gives food its flavour? What makes some foods taste really good while others can be mediocre or even disgusting? How far can science go it answering these (and other) questions that are so important for domestic cooks and chefs alike? These are some of the questions I will try to address with a series of demonstrations and thought experiments.

Café Scientifique Portsmouth is organised in collaboration with Portsmouth City Council, Blackwell Bookstore and Le Cafe Parisien on the fourth Tuesday of the month. It is part of the world-wide Café Scientifique movement (www.cafescientifique.org). Participation is free and open to all. No booking is necessary.
